5 Minute Savoury Cheese Mix

In the southern United States they have Pimento Cheese, they even refer to it as "Southern Pate" it is so well liked. Well in northern England we have a similar delicacy which is lovingly known as cheese savoury or cheese mix.



It makes an excellent topping for a Baked Potato, a good sandwich filler and my personal favourite turns any plate of french fries into instant "Disco Fries". It's easy to make, kids love it and it'll keep for a few days in the fridge so is worth making in a bulk batch.


As regular readers will know, I'm not the greatest fan of a mild (read weak) cheese so strongly recommend a good mature cheddar for this one, although I recently tried it with a crumbly Cheshire cheese and I must admit., I didn't hate it.


Ingredients

  • 250g Strong Hard Cheese (Mature Cheddar is a perfect candidate)

  • 1 Carrot

  • 2 Spring Onions / Scallions

  • 1 Small Red Onion - Red works well for taste and appearance but any onion will do if you're out of the red ones

  • 3 Tbsp Mayonnaise

  • 1 Tsp of Apple Cider Vinegar (Optional)

  • 1 Tsp English Mustard (Optional)

  • Salt & Pepper



Recipe

  1. Grate the cheese into a medium sized mixing bowl

  2. Grate the carrot into the bowl

  3. Finely chop the onion and add to the bowl.

  4. Chop and add the spring onion

  5. Add the mayonnaise, add a twist of pepper and mix well

  6. Cover the bowl with cling film and refrigerate for no less than 30 minutes for the flavours to develop (Don't skip this unless you have to, the difference is noticeable)

  7. Remove the bowl from the fridge and taste.

  8. Adjust the seasoning with salt and pepper to your desired taste profile

  9. Optional - I personally prefer a little extra acidity to bring out the cheese flavour so add a teaspoon of apple cider vinegar or substitute the mayonnaise for salad cream (not sure if Salad Cream is a thing outside the UK but essentially it's mayonnaise with a little vinegar added)

  10. Optional -If you like a little heat or want to bring a little more flavour of the cheese out, a teaspoon of English Mustard will achieve both. This works especially well when the Savoury Cheese is being served with salty meat like Smoked Ham or Gammon.



Tips & Tricks

  • This works really well as a dip also, just double up the mayonnaise and grate the onion instead of chopping to achieve a looser consistency and serve with crackers and crudites.

  • If you're serving in a sharing bowl, sprinkle some chives over the top to give it a cheffy finish

  • These are all ingredients I generally have in the house so this makes a great "I Want something really tasty but can't be bothered to go shopping for ingredients" kind of recipe

  • There's a temptation to leave out the carrot, but don't, it adds sweetness and balances the flavour as well as a little extra crunch, the Spring onion does a similar job by cutting through the richness of the mayonnaise cheese combo

  • Do not miss the opportunity to try this on some thick cut straight out of the fryer French Fries / Chips, you will not be disappointing with he hot / cold contrast and the cheese, onion and potato pairing is just perfect.

  • This works really well as starter or lunch salad accompaniment if you get caught short with an unexpected vegetarian guest

  • Also makes a good burger topping for an up-scaled Cheeseburger

  • Bacon - Everything goes with Bacon

  • If your cheese is super-strong and the whole thing is a little too rich, a splash of lemon juice will calm it down a little

  • This works great in a ham sandwich with a some chopped apple in it to make it a "Ploughmans" sandwich
